Vitamin C is a commodity vitamin: we require large amounts of it for collagen synthesis, but we cannot produce it; 100% of our vitamin C needs are met by means of dietary intake. Sodium ascorbate is a buffered form that is less acidic, and therefore less likely to cause stomach irritation.
